We are entering a busy season of our life. It’s the last six weeks of class at Texas Tech so Dr. Smartypants is really busy, and sometimes gets home late. I am spring cleaning and preparing for another garage sale. I am in purge mode! E is a never stopping whirlwind of toddler craziness. There are days I just don’t feel like cooking!
Enter freezer meals!
The preparation takes a bit of time, but is well worth it. When you are ready to cook it, simply pull it out of your freezer and let it thaw in the sink for a short time. When I am in a bit of a hurry, I will fill up the sink with warm water and let the bag sit in it to help it thaw faster. It doesn’t have to be completely thawed though to put it in the crockpot. It just needs to be able to break apart a bit. The heat of the crockpot will take care of the rest.
For the next four weeks, I will be running a new series: Freezer Fridays! Each Friday, I will feature the freezer meals that I made that week and I will include the recipe and instructions. My hope is that this will make your life a bit easier and that it will be a blessing to you!
Crockpot Honey Sesame Chicken
- 1 lb raw chicken (cubed)
- 3 T olive oil
- 1 cup honey
- 2 T sesame seeds
- 1/2 cup low sodium soy sauce
- 1 tablespoon sesame oil
- 1 t. salt
- 1 t. pepper
Place all ingredients in a freezer bag, toss to coat and freeze.
Write on your bag: Cook on low 4-5 hours. Remove chicken, shred, and place back in crockpot. Serve over rice.
Crockpot Curry Chicken
- 2-3/4 lb.raw chicken breast
- 1 jar (16 oz.) Salsa (I used homemade canned salsa! YUM!)
- 1/2 large onion, chopped
- 2 Tbsp. curry powder
Crockpot Tex Mex Shredded Chicken
- 4 to 5 raw chicken breasts
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon sugar
- 1 teaspoon onion powder
- 1 teaspoon granulated garlic
- 1/4 teaspoon cayenne pepper
- 1 large chopped onion
- 1/3 cup chicken broth
- juice of 1 lime.
Combine every thing into a freezer bag. Toss to coat.
Write on bag: Cook on low for 4-6 hours. Shred chicken and return to crockpot. You can find several different meals that use this chicken mixture at Recipes for our Daily Bread.
Slow Cooker Black Bean and Corn Salsa Chicken Tacos from Six Sisters Stuff
- 4-5 raw chicken breast
- Taco Seasoning pack (I used homemade)
- 2 cans black beans
- 16 oz of frozen corn
- 1 cup salsa
Combine everything into a freezer bag. Toss to coat.
Write on bag: Add 3/4 cup water. Cook on high 4 hours. Shred chicken and return to crockpot. Warm tortillas and garnish with sour cream, tomatoes and lettuce.

I haven’t tried the honey sesame one before. I’ll give that a try – I’m thinking chicken thighs might be good for that one, right? Do you need to thaw first?
