Greetings from the North Pole…
Or our house. We are currently experiencing a blizzard here which is AWESOME. Our part of Texas has been in a severe drought for 2 years so we desperately need the moisture. The snow was pretty heavy for most of today and the winds were blowing at 40-45 mph so the snow drifts are incredible! Alot of people don’t like the snow here, but I grew up with snow…big snows. Not these puny snows that last for 15 minutes after the sun comes up. So I find a blizzard super exciting!
This time we are getting one of the serious snows. Blizzard conditions. The interstate is closed down. Schools are closed. Businesses are closed. Our internet and tivo service is down…and my husband is home! How are you blogging, you may ask. We went 2 houses down to where we have set up camp and are getting snowed in with friends at their house (where they have internet!) It doesn’t hurt that my friend Janee loves to cook. 😉 So far we have eaten homemade potato soup, brownies, and we just made snow ice cream (which was amazing by the way!) !!! And we aren’t done eating. Later, Janee is making lasagna. I’m pretty sure we are never leaving… We’re moving in! Our kids are happy, our bellies are happy and we are happy. Best.Snowday.Ever.
So here’s the menu for the week.
Sunday breakfast- French Toast Bake <– I made this for Sunday school (2 big pans!) yesterday and it was DEVOURED. Yum!
Monday- White Chicken Chili <–was on the menu til the snowday happened! I’ll make it for lunch at some point this week. For tonight, we are eating lasagna with our friends! (because we are never leaving…they feed us to good!)
Tuesday- Weight Watchers Chicken Pot Pies
Wednesday- church dinner
Thursday- Crockpot Chicken Parmesan
Friday- Slow Cooker Beef Curry
