Menu Monday- January 20


MPM-Winter

 

I’ve loaded up on groceries and picked up our bountiful basket.  Last night, I made Eggplant Parmesan with homemade marinara sauce, and it was soooo good.  We put it over spaghetti noodles.  It’s a great vegetarian option! Yum!  Since part of Intentional 2014 is eating healthy, I have made it a goal to feed my family 1-2 vegetarian meals a week.

Here’s the menu for the week!

Monday- Spinach and Artichoke Pasta

Tuesday- Double Bean Mexican Lasagna

Wednesday- Church supper

Thursday- Tomatillo Ranch Chicken

Friday- Crispy Southwest Chicken Wraps

    I’m going to have to pin the recipe for spinach and artichoke pasta. My hubby would go nuts over that! Was it good?

    I forgot what vegetarian means… My husband’s idea of vegetarian is spaghetti without meat. I did used to have a roommate that was vegetarian though. She once made a traditional lasagna, but replaced the pasta with egg plant. It’s was actually really good!

      It was soooooo good!!!

      Vegetarians do not eat meat while vegans do not eat anything animal products whatsoever. And agreed, eggplant is really good!
